Delicious Immunity Boosting Broccoli Soup

Winter has officially hit us, and we’re off to a cold start.
Cold and Flu season might be here but now’s not the time to fret…yet. If you’re looking to try and avoid the flu this year, there’s one key thing you should focus on. 

Your immunity. It's the one important thing that determines how easily you fall prey to a cold. The stronger your immunity, the better your body will be at fighting off that nasty flu virus. 
So, how good is your immunity? 

Let’s not panic if your answer to that question was, “Ummmmm.” 
The best way to boost your immunity is through food! Nothing’s better than getting your nutrients from a delicious meal. 

And we’ve found a soup recipe that is warm, delicious, detoxifies and boosts immunity. Take that, winter. We’re not going down without a fight! 

What you’ll need:

1 white onion
1 tbsp of coconut oil
2 garlic cloves
1 tbsp of grated ginger
1 broccoli head
1 can of coconut milk - equivalent to 400ml 
200ml of vegetable stock

How to make it: 

Step 1. 
Finely chop the onion, and heat up the coconut oil in a large pot. Sauté the onions in the oil with a pinch of salt until golden (5 minutes.) 
Add in garlic and ginger, continuing to sauté (2 more minutes.)

Step 2. 
While that’s going, it’s time to work on the rest of the soup. 
Chop the broccoli and throw it in with the onions. Add a pinch of salt and stir (30 seconds.) 
Pour in the coconut milk and vegetable stock and simmer (20 minutes.) 

Step 3. 
Off the heat now, pour your cooled mixture into a blender and blend until smooth. Throw it back on the heat and finish it up, ready for dinner.

Pro tip:
Pair your nightly dose of Yin with this dish to keep your metabolism going overnight so that you’re metabolising these immunity boosting ingredients while you’re sleeping soundly. Wake up with a stronger immunity and less chances of catching a cold! 
For an added kick, add some crushed almond to garnish and squeeze a little lemon.
